Recipe: Florida Snapper & Shrimp Scampi

3 tablespoons olive oil
3 tablespoons butter
4 cloves Florida garlic, minced
3 Florida shallots, minced
1 tablespoon capers
1 tablespoon pimento, diced
1/2 cup white wine
1/2 cup bottled clam juice
1/2 teaspoon coarse ground black pepper
4 6-ounce Florida snapper fillets
1/2 pound medium Florida shrimp, peeled and deveined
1/2 cup fresh Florida parsley, minced
sea salt to taste
12 ounces vermicelli or angel hair pasta, cooked
Heat the oil and butter in a large sauté pan. Add garlic and shallots and sauté for 2 minutes over low heat, stirring often. Raise heat to medium, add capers, pimento, wine, clam juice and pepper; simmer for 2 minutes. Add filets and simmer over med-low heat for about 5 minutes. Add shrimp, spreading them evenly over the skillet; simmer for 3 minutes until filets and shrimp are cooked through. Stir in parsley; add salt to taste. Place fillets and shrimp on pasta on individual plates. Spoon scampi sauce over all and serve.

Recipe: Simply Delicious Pan-Seared Tuna

2 1-inch Florida yellowfin tuna steaks, approximately 1 1/4 pound each
2 tablespoons olive oil
sea salt to taste
coarse pepper to taste
sesame seeds
wasabi for dip
soy sauce for dip

Rub tuna steaks with olive oil. Salt and pepper steaks then on sprinkle sesame seeds. Brown tuna steaks for 1-2 minutes on both sides, being careful to not overcook. Serve wasabi and soy sauce on the side as dipping sauces.

Recipe: Grilled Tilapia

3/4 cup mayonnaise
1 teaspoon steak sauce
1 teaspoon Florida lime juice
2 tablespoons grated Parmesan cheese
1/8 teaspoon fresh dill, minced
4 large Florida tilapia fillets

Mix mayonnaise, steak sauce, lime juice, cheese and dill. Spread generously on both sides of fillets. Place coated fillets on grill and cook for 3-5 minutes on each side or until fish flakes easily with a fork.

Recipe:  Blue Crab Portabella

1/3 cup mayonnaise
1 egg
2 tablespoons milk
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
2 dashes hot pepper sauce
1/4 teaspoon pepper
1/8 teaspoon paprika
1 pound blue crab meat, drained, shell pieces removed
2 tablespoons cracker meal
12 fresh Portabella mushrooms, 2-3 inch diameter
2 tablespoons prepared Italian dressing

Preheat oven to 375 degrees F. Combine first 8 ingredients in a medium bowl. Gently fold in crabmeat and cracker meal.
Remove mushroom stems; brush caps with Italian dressing and place in a baking pan stem-side up. Fill mushrooms with crab mixture and sprinkle with paprika.
Bake for 10 to 12 minutes or until crab meat begins to brown
